Mom's Fresh Strawberry Pie

If you’re looking for the perfect summer pie, this is it! This fresh strawberry pie is refreshing and not too sweet. The recipe comes from New Brunswick, where my mom and her family have made this pie for many years during berry season. It is best if made with fresh, local strawberries.

Fresh Strawberry Pie

Fresh Strawberry Pie


  • 1/2 cup sugar
  • 1 1/2 tbsp cornstarch
  • 3/4 cup mashed strawberries
  • 1 tbsp lemon juice
  • 2 tbsp butter
  • 1 baked pie shell
  • enough fresh whole strawberries to make 1 layer in pie shell


  1. Mix sugar and cornstarch, add mashed strawberries, lemon and butter.
  2. Simmer on medium/low heat, stirring until thick.
  3. Cut off the stem and place whole strawberries cut face down in the pie shell, cover the entire base.
  4. Pour strawberry glaze over strawberries in pie shell.
  5. Place in the refrigerator until cool.
  6. Cover with whipped cream and serve.

  1. I’ve been making this pie for more years than I care to tell and it’s always been a family favorite.

    The only change I’ve made and we enjoy it is to add a thin layer of cream cheese or mascarpone to the top of the crust before putting in the strawberries; it sure does help to keep the crust from getting soggy and we actually love that bit of tang it brings too.

    That being said; I’ve yet to make one and now you’ve got me craving it!

    Family recipes are being forwarded to new generation because deliciousness is proved many times. One of such recipes for me – strawberry jam without cooking. It’s mashed strawberries with sugar. You have to keep it refregirated. But this way you can have a fresh taste of strawberries. I am for fresh taste!! I like your pie. Thank your mom for teaching you!!
